Greek Chicken Gyros with Cucumber Tzatziki

Ingredients

For the Chicken:

1 1/2 pounds boneless, skinless chicken thighs
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt
1/2 cucumber, grated
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper to taste

For the Gyros:

4 pita breads
1 small red onion, thinly sliced
1 tomato, chopped
1/4 cup fresh parsley, chopped

Directions

In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.

Preheat a grill or skillet over medium heat. Cook the chicken thighs for 5-7 minutes per side until fully cooked. Let the chicken rest, then slice into strips.

In a bowl, mix together Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper.

Warm the pita breads and spread each with tzatziki sauce. Add the sliced chicken, red onion, tomato, and parsley. Roll up and serve immediately.

Sheet Pan Chicken Fajitas

Ingredients

1 pound boneless, skinless chicken breasts, sliced
3 bell peppers, sliced
1 onion, sliced
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
Tortillas, for serving
Optional toppings: salsa, sour cream, avocado, lime wedges

Directions

Preheat Oven: Preheat your oven to 400°F. Prepare the Chicken and Veggies: On a sheet pan, arrange the chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss to coat everything evenly.

Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the veggies are tender.
Serve: Warm up the tortillas. Serve the chicken and veggies on the tortillas. Add your favorite toppings like salsa, sour cream, avocado, and a squeeze of lime juice.

Green Olive Dip

Ingredients

1 cup green olives, pitted
2 tablespoons capers, drained
2 cloves garlic, minced
1/2 teaspoon lemon zest
2 tablespoons fresh lemon juice
1/4 cup fresh parsley leaves
1/4 cup extra-virgin olive oil

Directions

Add the green olives, capers, minced garlic, lemon zest, lemon juice, and parsley leaves to a food processor.

Pulse and process until the mixture is finely chopped but still has some texture – you want it smooth enough to dip easily but not completely pureed. This usually takes about 1-2 minutes of processing with some scraping down the sides.

With the processor running, slowly drizzle in the olive oil until you reach a creamy, dippable consistency. You may need all 1/4 cup or slightly more depending on your preference.

Taste and add a pinch of black pepper if desired. The olives and capers usually provide enough salt.
Chill and serve: Transfer to a serving bowl and refrigerate for at least 30 minutes to let flavors meld. Serve with pita chips, crackers, fresh vegetables, or crusty bread.

One-Pan Summer Sausage and Veggie Skillet with Zucchini, Peppers & Corn

Ingredients

14 oz smoked chicken sausage, sliced into coins
1 tablespoon olive oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 zucchini, halved lengthwise and sliced
1 cup corn (fresh, canned, or frozen)
1/2 red onion, thinly sliced
1 cup cherry tomatoes, halved
2 cloves garlic, minced
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt, to taste
Black pepper, to taste
Juice of 1/2 lemon
1/4 cup crumbled goat cheese or feta
1 tablespoon balsamic glaze (for finishing)
Fresh parsley or basil, chopped (for garnish)

Directions

Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook for about 4–5 minutes, stirring occasionally, until browned. Transfer sausage to a plate and set aside.

In the same skillet, add the bell peppers, zucchini, corn, red onion, and cherry tomatoes. Cook for 6–8 minutes, stirring now and then, until the vegetables soften and start to caramelize.

Stir in the garlic, smoked paprika, and oregano. Let everything cook together for another minute to bring out the flavors.
Return the sausage to the pan and toss everything together. Squeeze in fresh lemon juice, then season with salt and black pepper to your taste.

Remove from heat. Top with crumbled goat cheese or feta, drizzle with balsamic glaze, and garnish with chopped parsley or basil.

2 tablespoons honey
2 tablespoons olive oil

1 cup cherry tomatoes

Directions

Preheat your oven to 400°F. Season the chicken breasts with salt, pepper, dried basil, and dried oregano.

Ingredients

1 pound beef tenderloin, cut into 1-inch thick medallions
1 tablespoon olive oil
Salt and freshly cracked black pepper to taste
1 French baguette, sliced into 1/2-inch pieces
2 tablespoons butter, melted (for brushing the bread)
4 ounces Gorgonzola cheese, crumbled
1 tablespoon cream cheese, softened
1 teaspoon chopped fresh chives or parsley
Balsamic glaze, for drizzling
Fresh thyme, for garnish

Instructions

Preheat oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush each slice with melted butter and toast for 6–8 minutes, flipping halfway, until golden and crisp. Set aside.
Season the beef medallions with salt and black pepper on both sides.

Heat olive oil in a skillet over medium-high heat. Sear the medallions for about 2–3 minutes per side for medium-rare, or until desired doneness is reached. Let rest for 5 minutes, then slice into smaller pieces to fit the crostini if needed.

Ingredients

4 bone-in, skin-on chicken thighs
1 zucchini, sliced
1 red bell pepper, chopped
1 red onion, chopped
2 cloves garlic, minced
2 cherry tomatoes, halved
1 cup Kalamata olives, pitted
1/4 cup artichoke hearts, canned or marinated
2 tablespoons olive oil
2 teaspoons dried oregano
1 teaspoon lemon zest
Salt and pepper to taste
Feta cheese, crumbled (optional)

Instructions

Preheat oven to 425°F. Line a large sheet pan with parchment paper or aluminum foil.

In a small bowl, mix together olive oil, dried oregano, lemon zest, salt, and pepper. Rub the mixture all over the chicken thighs, making sure they’re evenly coated.

Place the chicken thighs on one half of the sheet pan. Arrange the sliced zucchini, chopped red bell pepper, chopped red onion, and minced garlic around the chicken.Scatter the cherry tomatoes, Kalamata olives, and artichoke hearts over the vegetables.

Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the vegetables are tender and lightly caramelized.

Ingredients

2 cups cherry tomatoes, halved
1 tbsp olive oil
2 cloves garlic, minced
Salt and black pepper, to taste
8 oz fresh mozzarella, torn into pieces
4 oz cream cheese, softened
1/2 cup grated Parmesan cheese
1/4 tsp red pepper flakes (optional)
1/4 cup fresh basil, chopped
Balsamic glaze, for drizzling
Toasted baguette slices or crackers, for serving

Directions

Preheat oven to 375°F and grease a small baking dish. In a bowl, toss the cherry tomatoes with olive oil, minced garlic, salt, and black pepper. Transfer to the baking dish.

In a separate bowl, mix the softened cream cheese and grated Parmesan cheese. Spread evenly over the tomatoes.
Top with torn mozzarella pieces and red pepper flakes (if using).

1 lb Brussels sprouts, trimmed and halved
2 tbsp olive oil
1 tbsp unsalted butter
Salt and black pepper, to taste
1 tsp garlic powder
½ tsp red pepper flakes (optional)
2 tbsp balsamic glaze
¼ cup crumbled feta cheese
2 tbsp toasted pecans or walnuts (optional)

Directions

Heat olive oil and butter in a large skillet over medium heat.

Add the Brussels sprouts cut-side down and cook undisturbed for 4-5 minutes until golden brown and caramelized.

Season with salt, black pepper, garlic powder, and red pepper flakes (if using). Stir and cook for another 3-4 minutes until tender.

Drizzle with balsamic glaze and toss to coat evenly.Remove from heat and sprinkle with crumbled feta and toasted nuts (if using). Serve warm and enjoy!

Italian Sausage Soup

Ingredients

1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach – packed, rinsed and torn

Directions

Heat a stockpot or Dutch oven over medium-high heat. Add sausage and garlic; cook and stir until browned, 5 to 7 minutes.

Stir in broth, tomatoes, and carrots; season with salt and pepper. Reduce heat to medium-low, cover, and simmer 15 minutes.

Stir in beans with liquid and zucchini; cover and simmer another 15 minutes, or until zucchini is tender.

Remove soup from heat and add spinach; replace the lid and allow spinach to wilt. Stir until combines, and warmed through.
