Chipotle and Dark Chocolate Glazed Grilled Ribs

Ribs take a little time, but they don’t take much effort. This recipe does most of the work for you. The glaze comes together in minutes and the combination of smoky chipotle and dark chocolate turns into something deeply savory on the grill — not sweet, not spicy, just exactly right. Make these once and they’ll become your go-to for the rest of the summer.

Ingredients

For the Ribs:
2 racks baby back ribs
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon smoked paprika
2 tablespoons Chipotle olive oil

For the Glaze:
3 tablespoons Chipotle olive oil
3 tablespoons Dark Chocolate balsamic
1 tablespoon honey
1 clove garlic, minced
Salt to taste

Instructions

Remove the membrane from the back of the ribs and rub them all over with the Chipotle olive oil, salt, pepper, and smoked paprika. Let them sit at room temperature for 30 minutes while your grill heats up.

Set your grill up for indirect heat at around 300°F. Place the ribs meat side up over the indirect side, close the lid, and cook for two to two and a half hours until the meat is tender and has pulled back slightly from the bones.

While the ribs cook, whisk together the glaze ingredients in a small bowl and set aside.

When the ribs are ready, move them over direct heat and brush generously with the glaze. Cook for three to four minutes per side, glazing once more on each side, until caramelized and slightly charred at the edges.

Rest for ten minutes before slicing. Serve with whatever’s coming off the grill alongside them.
